
Ok I am happy about that! Down 5 lbs and week ain't over yet! How about them apples!
I wanted to share an excellent recipe I made the other day. It was really good! Here is photo of it.
It is called Smoked Paprika Roasted Salmon with Wilted Spinach
Makes 8 servings
1/4 Orange Juice
2 T plus 1 teaspoon olive oil, divided
2 t Thyme leaves
2 Pounds Salmon fillets
1 T brown sugar
1 T Smoked Paprika
1 t Saigon Cinnamon
1 t grated orange peel
1/2 t sea salt
1 bag of spinach leaves (10 oz)
Mix orange juice, 2 T of the oil and 1 t of the thyme in small bow. Place salmon in large glass dish. Add marinade; turn to coat well. Cover. Refrigerate 30 min. or longer for extra flavor.
Mix sugar, smoked paprika, cinnamon, orange peel, remaining 1 t of thyme and sea salt in small bowl. Remove salmon from marinade. Place in greased foil lined baking pan. Discard any remaining marinade. Rub top of salmon evenly with smoked paprika mixture.
Roast salmon in preheated over at 400 degrees for 10-15 minutes. or until fish flakes easily with a fork. Meanwhile, heat remaining 1 t oil in large skillet on medium heat. Add spinach, cook and stir 2 mins or until just wilted. Serve salmon over the spinach...YUM YUM.
